Who we are
welcome to evangeline’s, the fraser valley’s only restaurant
specializing in southern-style, slow-cooked barbeque and contemporary
soul foods. a little unclear on what that means? here are some helpful
descriptions:
barbeque – smoking
and roasting meats using indirect heat, smoke packets filled with
smoldering wood chips, and periodic basting. this method seals
the natural juices inside, and produces a moist and flavourful
product unmatched by other cooking methods.
soul food – traditional food of the african-american
people of the united states. soul food is hearty, comforting,
and delicious, though historically not always the healthiest due
to the limited availability of nutritious ingredients and the
liberal use of animal fats in preparation.
contemporary – in the here and now. unlike traditional
soul food, we use the highest-quality and most nutritious ingredients
available to us. rather than lard, we use butter and extra virgin
olive oil for our sauces, sunflower oil for our sautés,
and trans-fat free canola oil for our deep-frying. similar to
traditional soul foods, we use meats, cheeses, creams, grains,
fruits and vegetables produced and grown as close to home as possible.
while we specialize in dishes that are a little different, our
newly re-designed menu has plenty of familiar items waiting to
be rediscovered. so try something new or try something classic;
either way we know you’ll love it. just make sure you save
some room for dessert... |
